Ragi balls/Ragi Mudde.(Micro wave)

Ingredients:
  1. 1small cup of Ragi flour
  2. 2 measures water
  3. salt to taste.
  4. 1 tsp ghee.

                                                                               
Preparation Method:
  1. In a microwave dish put Ragi flour, salt to taste and water and mix well without lumps and microwave high for 2 minutes.
  2. Take it out add 1 tsp of ghee, mix well.
  3. Microwave for 2 -3 minutes more. 
  4. Serve hot with amaranth  and kala channa sambar .

Mango Rice.




Cooking time: 30 mins
                                                                                 





Ingredients: 

  • 1.5 cups Rice 
  • To Grind:
  • 1 raw Mango
  • 1 tsp Mustard
  • half cup Coconut grated
  • 4 red Chillies
  • Pinch of Asafoetida

  • 1 tsp Mustard seeds
  • 1 tsp Chana Dhal
  • 0.5 tsp Urad Dhal
  • 3 tbsp Peanuts
  • 1 tsp Turmeric powder
  • 3-4 tbsp Oil
  • 2 Red Chillies
  • 20-25 Curry Leaves
  • salt to taste
                                                                               
Preparation Method:
  1. Cook the rice and cool it.Each grain of rice should be seperate.
  2. Wash, peel,and cut mangoes into small pieces.
  3. Grind mango, coconut, 4 red chillies and 1 tsp of mustard into a fine paste.
  4. In 4 tbsp of oil crackle mustard, add chana dhal. urad dhal, peanuts and fry until golden.
  5. Add red chillies, curry leaves, Turmeric powder and asafoetida fry for a minute.
  6. Add the ground mixture and fry for 2-3 minutes.
  7. Add the rice and salt and mix well.
  8. If the mango is not sour, you can add few drops of lemon juice to taste.
  9. Serve it hot.
  10. You can add a spoon of sugar or a small piece of jagery while grinding the mango.

Brocoli Gratin.



Preparation time: 25-30 mins
Cooking time: 30 mins






Ingredients: 

  • 500 gms Brocoli, 
  • 20 gms  Butter,
  • 1.5 tsp Flour
  • 1.5 cups of Milk,
  • 1.5 -2 cups grated Gruyere cheese  or cheddar,
  • 10 cl Cream,
  • 0.5 tsp pepper powder,
  • 0.5 tsp nitmeg powder,
  • salt to taste.
                                                                               
Preparation Method:
  1. Wash Brocoli and cut them into florets,
  2. Microwave it for 5 minutes,
  3. Add salt to taste and microwave it for another 2-3 minutes.
  4. In a non-stick pan melt butter, and fry the flour for 2-3 minutes,
  5. Add milk and keep mixing it so that lumps are not formed,
  6. Add salt  Pepper  and grated nut meg to the white sauce
  7. Add half of the grated cheese and the cream and mix well.
  8. Spread the microwaved brocoli in a baking dish and pour the white sauce on the brocoli,
  9. Spread the remaining cheese ,
  10. Bake it in a preheated oven until it is golden brown,
  11. Approximately 25-30 minutes at 200 degrees celsius.

Cabbage & Carrots Stir Fry

Preparation time: mins
Cooking time: 20 mins
                                                                                 




Ingredients: 
  • 250 g cabbage
  • 2 carrots
  • 1  red pepper
  • 3 tbsp oil
  • 1/2 tsp mustard
  • 1/2 tsp cumin
  • 1 tsp channa/ gram dhal
  • 1/2 tsp black gram dhal
  • 1/4 tsp turmeric powder
  • pinch of asafoetida
  • 3 red chillies
  • 10  curry leaves
  • 2 tbsp of desiccated coconut 
                                                                               
Preparation Method:
  1. Wash and cut the vegetables into big chunks.
  2. Then pass them through a food processor to get smaller pieces.
  3.  Heat 3 tbsp of oil in a non-stick pan, then add mustard, cumin, dhal, turmeric and asafoetida until the mustard crackle and the dhal turn golden brown.
  4. Then add Curry leaves and red chillies.
  5. After 1 minute, add the chopped vegetables and a little water.
  6. Stir at equal time intervals for 10 minutes.
  7. Then add salt to taste and let it cook.
  8. After 8 minutes add the coconut, turn of the heat and cover it.

Jeera Pulav

(Cumin Rice)




Preparation time: 15 mins
Cooking time:  30 mins
                                                                                 




Ingredients: 

  • 2 cups of Basmati Rice 
  • 4 cups of Water 
  • 2 tsp Jeera (Cumin)
  • 6 Cloves 
  • 1 inch / 2.5 cm Cinnamon 
  • 4 Cardamoms
  • 2 Bay leaves
  • 3 tsp of Oil 
  • 2 Carrots finely diced
  • 1/2 cup of Frozen Peas
  • Salt to taste
                                                                               
Preparation Method:
  1. Soak the Rice in Water for 15 minutes.
  2. In a non-stick pan heat the oil. Then add all the spices. 
  3. After 1 min. add the rice and fry.
  4. After 5 mins add the diced carrots and frozen peas. Fry for 4 minutes.
  5. Transfer the whole into a rice cooker. Add the water and salt to taste.
  6. Cook until done ( about 20 minutes).

Spicy Mixed Vegetable Curry

Preparation time: 10 mins
Cooking time: 30 mins
                                                                                 


Ingredients: 

Vegetables:
  • 1/2 Cup of Cut French beans 
  • 1/2 Cup of Diced Carrots 
  • 2 Cubed Potatoes
  • 1 Cup Cut Cauliflower
                         OR 
  • 1/2 Kg of Frozen Vegetables 
Gravy:
  • 1 Onion
  • 2 Garlic Cloves
  • 3 Red Chillies ( to taste) 
  • 1/2 tsp Jeera (cumin) 
  • 1 inch / 2.5 cm Cinnamon
  • 3 Cloves
  • 3 Cardamom
  • 1 tsp Coriander seeds
  • 2 tsp Cashews 
  • 1 tsp Poppy seeds
  • 1/2 cup Grated Coconut
  • 4 tsp Oil to fry 
  • Salt to taste 
                                                                               
Preparation Method:
  1. Cook the vegetables in a pan for 10 minutes with little water.
  2. In the mean time, Heat the oil in a non-stick pan, and add Jeera, Cinnamon, Cardamom, Coriander seeds, Onions. Fry until the onions are slightly brown. (about 10 mins)
  3. Then add Cashew nuts, Poppy seeds and mix well. Add the coconut and red chilies until golden brown. 
  4. Grind all the fried ingredients and add it to the vegetables.
  5. Add salt to taste.
  6. Let it all simmer for 10 minutes.
