Garlic and red chillies chutney.




  Cooking time: 5min.



Ingredients: 

  • 4-5 red chillies
  • roasted chana dhal
  •  3-5 tbsp grated coconut
  • 4-5 cloves of garlic
  • 1 spoon lemon juice
  • salt to taste
                                                                               
Preparation Method:
  1. Grind all the ingredients with a little water to a fine paste.
  2. Add a spoon of sugar (optional).
  3. Good with samosas and doklas

Dates and Tamarind Chutney.

Ingredients:
150 g Dates
70 g Jagery or Brown Sugar
2-3 tbsp Tamarind (tamcon)
3-4 tsp roasted cumin powder
2 tsp roasted pepper powder
1 tsp Black salt
1 tsp Chat Masala

Preperation Method:

  1. Pressure cook dates,
  2. When cool deseed them
  3. Grind the deseeded dates and jagery in a mixer
  4. Add tamarind, roasted cumin powder, roasted pepper powder, chat masala and black salt.
  5. Boil the mixture for 10-15 minutes until the syrup becomes slightly thick.
  6. You can store this chutney for more than a month.

Green Chutney.

Ingredients :

1 bunch Coriander
1 bunch Mint
7-8 Green Chillies(to taste)
2 inches Ginger
2 cloves garlic(optional)
1 medium sized Onion
salt to taste
1 tbsp Lemon Juice.
Preperation Method :

  1. Wash,  clean coriander  and mint and chop it.
  2. Chop Onions and ginger,
  3. Grind all the Ingredients in a mixer,
  4. Add a little water if you want.
  5. Store it in a clean dry jar.
  6. You can save this chutney in the refrigerator for nearly a month.

Tomato chutney.

Cooking time: 30-35 mins








Ingredients: 

  • 3 - tomatoes
  • 1 - Onion
  • 4 - Red Chillies
  • 1 inch - Stick Cinamon
  • 5-6 Cloves
  • 2 - Cloves of Garlic
  • 15-20 Curry leaves
  • 3 tbsp Oil
  • 1tsp Garam Masala
  • 1 tsp Mustard
  •  1 tsp Chana Dhal
  • 1 tsp Urad Dhal
  •  Pinch of Asafoetida
  • Salt to taste
                                                                               
Preparation Method:
  1. Wash tomatoes and chop them finely,
  2. Chop the Onions and Garlic,
  3. Heat the oil in a non-stick pan,
  4. Crackle Mustard, add cloves Cinamon,Channadhal,Urad dhal, fry until golden,
  5. Add curry leaves, chillies, garlic and onions,
  6. Fry until lightly golden,
  7. Add tomatoes and cook for 10-15 minutes 
  8. Grind the mixture with a hand mixer.
  9. Add Garam Masala and salt to taste,
  10. Let it cook until the water content is evaporated.
  11. You should get the chutney consistency.
  12. You can mix it with hot rice and eat
  13. You can apply this chutney to sandwiches also.
