Mustard Rice - Kadige Ogare.

Preparation time: 20 mins
Cooking time: 30 mins
                                                                                 



Ingredients:
  • 1.5 cups of Basmathi Rice,
  • 1 tsp Mustard Seeds
  • 3-4 Red chillies
  • 1  tsp Tamcon(tamarind extract),
  • 3 tbsp Fresh Coconut,
  • small piece of Jaggery or 1 tsp sugar,
  • 1tsp Chana Dhal,
  • 1tsp Urad Dhal,
  • 2 tbsp of Peanuts,
  • 3-4 tbsp of oil,
  • 0.5 tsp Mustard for tempering,
  • 2 dry Red Chillies (adjust to taste),
  • 0.5 tsp Haldi,
  • pinch of Asafoetida,
  • Salt to taste.
                                                                               
Preparation Method:
  1. Cook rice in the rice cooker and cool it,
  2. Each grain of rice should be separate, should not be mushy,
  3. Grind dry red chillies, coconut,tamarind, 1 tsp mustard and jaggery / sugar into a smooth paste.
  4. In a nonstick pan, heat oil and add mustard, chana dhal. urad dhal, peanuts and asafoetida,
  5. Fry until it turns golden,
  6. Add red chillies and curry leaves fry for a few seconds,
  7. Add Haldi,
  8. Add the ground paste and fry for 2-3 minutes,
  9. Add the cooked rice and mix well,
  10. Add salt to taste.
  11. Mix thoroughly and switch of the heat.
  12. This will be medium hot.
  13. People who want it spicy add chillies to taste.

Jeera Pulav

(Cumin Rice)




Preparation time: 15 mins
Cooking time:  30 mins
                                                                                 




Ingredients: 

  • 2 cups of Basmati Rice 
  • 4 cups of Water 
  • 2 tsp Jeera (Cumin)
  • 6 Cloves 
  • 1 inch / 2.5 cm Cinnamon 
  • 4 Cardamoms
  • 2 Bay leaves
  • 3 tsp of Oil 
  • 2 Carrots finely diced
  • 1/2 cup of Frozen Peas
  • Salt to taste
                                                                               
Preparation Method:
  1. Soak the Rice in Water for 15 minutes.
  2. In a non-stick pan heat the oil. Then add all the spices. 
  3. After 1 min. add the rice and fry.
  4. After 5 mins add the diced carrots and frozen peas. Fry for 4 minutes.
  5. Transfer the whole into a rice cooker. Add the water and salt to taste.
  6. Cook until done ( about 20 minutes).
